What is Pepper Mash?

Pepper mash is a mixture of ground or crushed chili peppers, combined with salt, that is fermented to develop deep, complex flavors. It includes the whole pepper, including seeds and skins, and serves as a key ingredient in many hot sauces, salsas, and other condiments. The fermentation process enhances the natural flavor and heat of the peppers, making pepper mash a versatile and flavorful base for food products that require bold, spicy profiles.

Step 1 : Making Mash

Fresh peppers are washed, de-stemmed and ground into a ‘mash’

The mash contains visible seeds and skins from the freshly ground + mashed peppers.

Step 2: Fermentation

Salt is added to the mash to begin the fermentation process.

This naturally acidifies the mash and lowers the PH to create a shelf stable product.

Step 3: Transport

Mash is transported to the US in our patented Flexi-Tank system.
